Peanut Butter Mousse Frosting

I put in the middle of my chocolate mini-bundts.  Recipe from Amicus Cupcake.



INGREDIENTS
2 cups creamy peanut butter (not natural)
16 ounces of cream cheese, room temperature
2 cups powdered sugar
2 tbsp vanilla
2 cups chilled whipping cream

STEPS
Beat together until smooth and well blended:
2 cups creamy peanut butter (not natural)
16 ounces of cream cheese, room temperature
2 cups powdered sugar

Using clean, chilled beaters, and a chilled bowl, beat 2 cups chilled whipping cream to stiff peaks.

Fold ¼ of the whipped cream into the peanut butter mixture. Fold in the remaining whipped cream ¼ at a time. Fold until smooth and well mixed. Chill in the fridge until ready to use.
